My Favorite Cracker Substitutes
Some foods call for crackers, and for me, tuna, chicken or salmon salad are some of those. I don't want them on bread, I want them on crackers. I love the crunch to go with the softer texture of those salads. I also don't want it plain or on lettuce. Sadly, crackers aren't on my menu since my stomach doesn't like grains of any kinds. Tuna salad IS on the menu, so I needed something to fill the void. I have three things I love to use as cracker substitutes for this.
Cucumbers are so crisp and fresh. I love them on my tacos, in my salads, and as a substitute cracker for my tuna salad, chicken salad, and salmon salad. My preference is English cucumbers. If they are organic and unwaxed, I leave the skins on because I like the color and because there are nutrients and fiber there.
My second cracker substitute is sweet peppers. I like to halve the pepper and fill them like boats. For something easier to handle use the baby peppers. Kids love anything miniature (ok, so do I!), and it is easier to handle. Again, peppers provide that crisp contrast, beautiful color (my favorite is red), and the extra serving of veggies doesn't hurt, either. My kids LOVE eating these. One more option most people don't consider is serving these salads on apple slices, and it's such a delicious alternative. It's so fresh and the surprise sweetness is perfect.

Tuna or chicken salad boats, or served on apple rings would be so pretty and fresh for a bridal or baby shower or some other party. Not only that, but anyone who has diet restrictions (and there are so many people who have them now!) will be grateful that it's not on bread or crackers.
Next up? Guacamole. Oh, how I love guacamole. It's one of my favorite foods on the planet. Given the choice between dessert and guacamole, I choose the green stuff. Sadly, the tasty tortilla chips that go with them make my tummy unhappy, so I dip carrots, celery or peppers in my guac. I get that satisfying crunch I crave, and no competing flavors.
Peanut butter/almond butter crackers are a classic snack, but crackers aren't on my menu. I like to make ants on a log instead. Peanut butter-filled celery sticks are tasty and filling. Top them with chocolate chips (I don't like raisins) if you're feeling crazy, and it is a great portable snack that delivers the same creamy, crunchy satisfaction. My favorite option though, is to put it on apples and add either dairy-free chocolate chips or pretzels (just for the kids now, but I used to love this!). Creamy, crunchy, sweet, salty deliciousness. So. Good.
Hummus is one of my favorite snacks, and instead of pita, I like to use all kinds of veggies for dipping: snap peas, sliced bell peppers, carrots, cucumbers, celery, and...apples. Yes, apples. I want crunch, crunch, crunch, and color to make it pretty. Hummus doesn't offer much in the way of visually feeding you, so the colorful veggies provide that as well.
